And here is the masterpiece, a zero-sugar Spumante Champenoise bone dry, upright, reduced to its essentials, like a Brancusi artwork aiming straight at the heart of wine-making. Pale, with a whole palette of sensations, clean, uncompromising, almost austere, it's a whole different experience in fine drinking.
Fermented with indigenous yeasts, it was then re-fermented in bottle with 9 months of lees aging ahead of disgorgement and the final release without the addition of any further sugar. A richer colour than the Cartizze, it features a subtle sensation of apple, elderflower, laced with minerals and toasted crusts.
Only made from the best vintages it is produced once every few years: 670 cases produced of this vintage.
