Fattoria Kappa is a modern estate incorporating ancient, traditional practices. Taking on a vineyard where a homesick native of Friuli had planted all the vines from home, they decided to keep these imported vines, which had acquired the expansiveness of the more generous southern conditions. The result speaks for itself. The vineyard and cellar are worked manually using working horses. Grapes are pressed by treading, macerated for several weeks with their natural lees, and stirred daily using batonnage. Fermentation occurs spontaneously using native yeasts. Aged in French large oak barrels, 20% new, for12 months. Fined in concrete tanks for a further 6 months. The result is a dark, brooding super Tuscan with a dense, inky colour and viscous dark cherry, leather, hazel, caramel and spices. Rich, deep and intense, a wine of great depth and elegance.
