Casebianche, Iscadoro, Bianco Paestum IGT 2012
13° Grape: 30% fiano, 40% malvasia, 30% trebbiano & other local white varieties
This small (5 h), experimental farmer takes risks. In addition to a spectacular sparkling Fiano, this white is partly macerated in chestnut (just the Fiano),while the other white grapes from their smallest vineyard are pressed together as one. He uses naturally-occurring yeasts on which he fines the wine for 6 months in steel, and 20% in acacia barrels. The result is an unfiltered, golden wine with greenish hues, clear nose of citrus and mature fruit such as apricots, mango, passion fruit, laced with spices and mediterranean herbs and brush soffused in smoke. Soft and rich on the tongue it is offset by a bouncy acidity which highlights notes of grapefruit. A long, persistent finish completes its aromatic complexity.
